Roasted Beet Mint Shrub

Earthy roasted beet, cider vinegar, lemon, mint, and sparkling water over ice.

Ingredients

  • 1 small cooked beet, chopped
  • 1/2 cup fresh mint leaves
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey, optional
  • Pinch of sea salt
  • 2 cups chilled sparkling water
  • Ice

Method

  1. Blend beet, vinegar, lemon juice, honey, and salt until smooth.
  2. Strain the beet shrub through a fine sieve.
  3. Shake the shrub with mint and ice for 15 seconds.
  4. Strain into two ice-filled glasses.
  5. Top with sparkling water and garnish with mint.

Fresh Mint Tip

Shake mint with the beet base instead of blending it so the drink stays clean, not grassy.
