Ingredients
- 1 large cauliflower, cut into florets
- 2 teaspoons zaatar
- 3 cups cooked farro
- 1 can chickpeas, drained
- 1/2 cup crumbled feta
- 1/2 cup torn fresh mint
- 1 lemon, juiced
- Olive oil, salt, and pepper

Dinner
Nutty farro, zaatar cauliflower, chickpeas, feta, lemon, and a shower of fresh mint.
Toss mint into warm, not hot, grains so it releases aroma without turning dull.
