Zaatar Roasted Cauliflower with Mint Farro

Nutty farro, zaatar cauliflower, chickpeas, feta, lemon, and a shower of fresh mint.

Ingredients

  • 1 large cauliflower, cut into florets
  • 2 teaspoons zaatar
  • 3 cups cooked farro
  • 1 can chickpeas, drained
  • 1/2 cup crumbled feta
  • 1/2 cup torn fresh mint
  • 1 lemon, juiced
  • Olive oil, salt, and pepper

Method

  1. Roast cauliflower with zaatar, olive oil, salt, and pepper at 425 F until browned.
  2. Warm farro and chickpeas together with a splash of olive oil.
  3. Toss farro with lemon juice, feta, and mint.
  4. Pile roasted cauliflower over the mint farro.
  5. Finish with extra olive oil and black pepper.

Fresh Mint Tip

Toss mint into warm, not hot, grains so it releases aroma without turning dull.
