Ingredients
- 2 cups basmati rice
- 1 onion, sliced
- 3 cups mixed vegetables
- 2 teaspoons biryani masala or garam masala
- 1/4 cup cashews
- 1/4 cup raisins
- 1 cup yogurt
- 1/2 cucumber, grated and squeezed
- 3/4 cup chopped fresh mint
- Salt, oil, and lemon juice

Dinner
Spiced rice, vegetables, cashews, raisins, and a cooling cucumber mint raita.
Chill the raita while the biryani steams so the mint tastes extra cooling.
