Turkish Stuffed Zucchini with Mint Yogurt

Tender stuffed zucchini simmered in tomato broth and finished with cool mint yogurt.

Ingredients

  • 4 medium zucchini
  • 1/2 pound ground beef or lamb
  • 1/2 cup uncooked rice
  • 1 onion, grated
  • 1 cup tomato sauce
  • 1 teaspoon allspice
  • 1 cup plain yogurt
  • 1/2 cup chopped fresh mint
  • Lemon juice, salt, and pepper

Method

  1. Halve zucchini lengthwise and scoop out the centers.
  2. Mix meat, rice, onion, allspice, salt, pepper, and a spoonful of tomato sauce.
  3. Fill zucchini and arrange in a covered skillet or baking dish.
  4. Add remaining tomato sauce and enough water to come halfway up the zucchini; simmer or bake until rice is tender.
  5. Serve with yogurt mixed with mint, lemon juice, and salt.

Fresh Mint Tip

Keep the mint yogurt cool; it is the contrast to the warm tomato broth.
