Turkish Red Lentil Soup with Mint Butter

A silky red lentil soup with lemon, paprika, and sizzling fresh mint butter.

Ingredients

  • 1 1/2 cups red lentils, rinsed
  • 1 onion, diced
  • 1 carrot, diced
  • 1 tablespoon tomato paste
  • 6 cups vegetable stock
  • 3 tablespoons butter
  • 1 teaspoon paprika
  • 1/3 cup chopped fresh mint
  • Lemon wedges, salt, and pepper

Method

  1. Cook onion and carrot in a little oil until soft.
  2. Stir in tomato paste, lentils, stock, salt, and pepper; simmer until lentils collapse.
  3. Blend until smooth or leave slightly textured.
  4. Melt butter with paprika, then stir in mint off heat.
  5. Ladle soup into bowls and spoon mint butter over the top.

Fresh Mint Tip

Take the butter off the burner before adding mint to keep the herb sweet instead of bitter.
