Sweet Potato Chickpea Curry with Mint Chutney

Creamy sweet potato curry with chickpeas, coconut, lime, and a sharp mint chutney.

Ingredients

  • 2 sweet potatoes, cubed
  • 1 can chickpeas, drained
  • 1 onion, diced
  • 2 tablespoons curry paste
  • 1 can coconut milk
  • 1 cup mint leaves
  • 1/2 cup cilantro leaves
  • 1 lime, juiced
  • 1 green chile
  • Salt, oil, and rice

Method

  1. Cook onion in oil until soft, then stir in curry paste.
  2. Add sweet potatoes, chickpeas, coconut milk, salt, and a splash of water.
  3. Simmer until sweet potatoes are tender.
  4. Blend mint, cilantro, lime juice, chile, and salt into chutney.
  5. Serve curry over rice with mint chutney.
