Steak Fajita Bowls with Mint Avocado Crema

Sizzling steak, peppers, onions, rice, lime, and a creamy avocado mint sauce.

Ingredients

  • 1 pound skirt steak
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 3 cups cooked rice
  • 1 avocado
  • 1/2 cup fresh mint leaves
  • 1 lime, juiced
  • 1/2 cup sour cream or yogurt
  • Chili powder, salt, pepper, and oil

Method

  1. Season steak with chili powder, salt, pepper, and oil.
  2. Sear steak, peppers, and onion until charred and tender.
  3. Blend avocado, mint, lime juice, sour cream, salt, and a splash of water.
  4. Slice steak across the grain.
  5. Build bowls with rice, vegetables, steak, and mint avocado crema.
