Smashed Cucumber Mint Chicken Rice

Tender chicken, warm rice, crunchy smashed cucumber, ginger dressing, and mint leaves.

Ingredients

  • 3 cups cooked rice
  • 2 cups shredded cooked chicken
  • 2 cucumbers
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 cup fresh mint leaves
  • Sesame seeds and chile oil

Method

  1. Smash cucumbers lightly, then cut into bite-size pieces.
  2. Whisk ginger, soy sauce, rice vinegar, sesame oil, and a splash of water.
  3. Toss cucumber with half the dressing and mint leaves.
  4. Warm chicken with the remaining dressing.
  5. Serve chicken over rice with smashed cucumber salad, sesame seeds, and chile oil.

Fresh Mint Tip

Salt cucumbers lightly only after smashing so they stay crunchy with the mint.
