Seared Tuna with Mint Salsa Verde

Rare-seared tuna topped with a briny green sauce of mint, parsley, capers, and lemon.

Ingredients

  • 4 tuna steaks
  • 1 cup parsley leaves
  • 1/2 cup fresh mint leaves
  • 2 tablespoons capers
  • 1 anchovy fillet, optional
  • 1 lemon, zested and juiced
  • 1 small garlic clove
  • Olive oil, salt, and pepper

Method

  1. Chop parsley, mint, capers, anchovy, garlic, and lemon zest together.
  2. Stir with lemon juice and olive oil until spoonable.
  3. Season tuna with salt and pepper.
  4. Sear tuna in a very hot pan for 1 to 2 minutes per side.
  5. Slice and serve with mint salsa verde.

Fresh Mint Tip

Keep salsa verde chunky; visible mint leaves make the sauce taste fresher.
