Roasted Carrot Lentil Salad with Mint Yogurt

Sweet roasted carrots and earthy lentils with feta, walnuts, lemon, and mint yogurt.

Ingredients

  • 1 1/2 pounds carrots, halved
  • 2 cups cooked green lentils
  • 1/2 cup crumbled feta
  • 1/3 cup toasted walnuts
  • 1 cup plain yogurt
  • 1/2 cup chopped fresh mint
  • 1 lemon, juiced
  • 1 teaspoon cumin
  • Olive oil, salt, and pepper

Method

  1. Roast carrots with olive oil, cumin, salt, and pepper until browned.
  2. Warm lentils with a splash of olive oil and lemon juice.
  3. Stir yogurt with mint, lemon juice, salt, and pepper.
  4. Arrange lentils and carrots on plates.
  5. Top with feta, walnuts, and mint yogurt.
