- 1 1/2 pounds carrots, halved
- 2 cups cooked green lentils
- 1/2 cup crumbled feta
- 1/3 cup toasted walnuts
- 1 cup plain yogurt
- 1/2 cup chopped fresh mint
- 1 lemon, juiced
- 1 teaspoon cumin
- Olive oil, salt, and pepper

Sweet roasted carrots and earthy lentils with feta, walnuts, lemon, and mint yogurt.
Mint yogurt is best spooned on at the table so it stays cool against the warm lentils.
