Roast Chicken with Mint Salsa

Simple roast chicken with a punchy mint salsa of lemon, parsley, capers, and olive oil.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 1 lemon, halved
  • 1 cup parsley leaves
  • 3/4 cup fresh mint leaves
  • 2 tablespoons capers
  • 1 garlic clove
  • 1 tablespoon red wine vinegar
  • Olive oil, salt, and pepper

Method

  1. Season chicken generously with salt, pepper, olive oil, and lemon.
  2. Roast at 425 F until the thigh reaches 165 F, then rest.
  3. Chop parsley, mint, capers, and garlic together.
  4. Stir with vinegar, olive oil, salt, and pepper.
  5. Carve chicken and serve with mint salsa.
