Pork Tenderloin with Mint Apple Slaw

Lean pork tenderloin meets a crisp cabbage, apple, lemon, and mint slaw.

Ingredients

  • 2 pork tenderloins
  • 1 teaspoon Dijon mustard
  • 1 small green cabbage, thinly sliced
  • 2 crisp apples, cut into matchsticks
  • 1/2 cup fresh mint leaves, torn
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt, pepper, and a pinch of sugar

Method

  1. Rub pork with Dijon, olive oil, salt, and pepper.
  2. Roast at 425 F until the center reaches 145 F, then rest.
  3. Toss cabbage and apples with lemon juice, olive oil, salt, pepper, and a pinch of sugar.
  4. Fold mint through the slaw right before serving.
  5. Slice pork and plate with the mint apple slaw.

Tear large mint leaves into the slaw so every bite gets a cool edge without overpowering the apples.
