Persian Herb Frittata with Mint

A green, dinner-worthy herb frittata packed with mint, parsley, cilantro, and dill.

Ingredients

  • 8 eggs
  • 1 cup chopped parsley
  • 1 cup chopped cilantro
  • 1/2 cup chopped dill
  • 1/2 cup chopped fresh mint
  • 4 scallions, thinly sliced
  • 1/2 teaspoon turmeric
  • 1/3 cup walnuts, chopped
  • Olive oil, salt, and pepper

Method

  1. Whisk eggs with turmeric, salt, and pepper.
  2. Fold in parsley, cilantro, dill, mint, scallions, and walnuts.
  3. Pour into an oiled ovenproof skillet and cook over medium heat until edges set.
  4. Bake at 375 F until just firm in the center.
  5. Serve warm with yogurt, salad, or flatbread.

Fresh Mint Tip

Dry washed mint well before chopping so the frittata sets cleanly.
