Miso Salmon Rice Bowls with Mint Pickles

Savory miso salmon over rice with cucumber radish pickles and fresh mint.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons white miso
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 3 cups cooked rice
  • 1 cucumber, thinly sliced
  • 4 radishes, thinly sliced
  • 1/2 cup fresh mint leaves
  • 2 tablespoons rice vinegar
  • Sesame seeds

Method

  1. Whisk miso, honey, soy sauce, and a splash of water; brush over salmon.
  2. Roast salmon at 400 F until just cooked through.
  3. Toss cucumber, radishes, rice vinegar, mint, and a pinch of salt.
  4. Divide rice among bowls.
  5. Top with salmon, mint pickles, and sesame seeds.

Fresh Mint Tip

Add mint to quick pickles right before serving so vinegar does not darken the leaves.
