Minty Black Bean Quinoa Bowls

Hearty quinoa bowls with black beans, sweet potato, avocado, lime, and minty herb sauce.

Ingredients

  • 3 cups cooked quinoa
  • 2 sweet potatoes, cubed
  • 2 cans black beans, warmed
  • 1 avocado, sliced
  • 1 cup fresh mint leaves
  • 1/2 cup cilantro leaves
  • 2 limes, juiced
  • 1 small garlic clove
  • Olive oil, salt, and pepper

Method

  1. Roast sweet potatoes with olive oil, salt, and pepper until tender and browned.
  2. Blend mint, cilantro, lime juice, garlic, olive oil, salt, and pepper into a loose sauce.
