Minted Lemon Chicken with Herbed Couscous

Grilled chicken, cucumber, lemon, and fluffy couscous finished with a quick mint yogurt sauce.

Ingredients

  • 4 chicken cutlets or thighs
  • 1 lemon, zested and juiced
  • 2 cups cooked couscous
  • 1 diced cucumber
  • 1 cup plain yogurt
  • 1/2 cup chopped fresh mint, plus leaves for serving
  • Olive oil, salt, pepper, and parsley

Method

  1. Season chicken with olive oil, lemon juice, salt, and pepper.
  2. Grill or sear until browned and cooked through.
  3. Fold cucumber, parsley, lemon zest, and a splash of olive oil into the couscous.
  4. Stir mint into yogurt with a pinch of salt and lemon juice.
  5. Serve chicken over couscous with mint yogurt and whole mint leaves.

Add chopped mint to the yogurt right before serving for the freshest aroma.
