Minted Lamb and Eggplant Ragu

Ground lamb, silky eggplant, tomato, cinnamon, lemon, and fresh mint over pasta or grains.

Ingredients

  • 1 pound ground lamb
  • 1 eggplant, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1/2 teaspoon cinnamon
  • 1 can crushed tomatoes
  • 1/2 cup chopped fresh mint
  • 1 lemon, zested
  • Pasta or couscous, salt, and pepper

Method

  1. Brown lamb in a deep skillet and spoon off excess fat if needed.
  2. Add eggplant, onion, garlic, salt, and pepper; cook until softened.
  3. Stir in cinnamon and crushed tomatoes.
  4. Simmer until eggplant is silky and sauce is thick.
  5. Fold in lemon zest and mint, then serve over pasta or couscous.
