Minted Chicken Meatball Rice Soup

Tender chicken meatballs in a light lemon rice broth finished with spinach and mint.

Ingredients

  • 1 pound ground chicken
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 garlic cloves, grated
  • 6 cups chicken stock
  • 1/2 cup rice
  • 3 cups baby spinach
  • 1 lemon, juiced
  • 1/2 cup chopped fresh mint
  • Salt, pepper, and olive oil

Method

  1. Mix chicken with breadcrumbs, egg, half the garlic, salt, and pepper; form small meatballs.
  2. Bring stock to a simmer with rice and remaining garlic.
  3. Drop in meatballs and simmer until rice and meatballs are cooked.
  4. Stir in spinach and lemon juice.
  5. Serve with mint scattered into each bowl.

Add mint to individual bowls rather than the pot so leftovers do not taste dull.
