Mint Coriander Fish Curry

Tender white fish simmered in coconut curry with coriander, chile, lime, and mint.

Ingredients

  • 1 1/2 pounds cod or halibut, cut into pieces
  • 1 cup coconut milk
  • 1 cup cilantro leaves
  • 3/4 cup fresh mint leaves
  • 1 green chile
  • 2 garlic cloves
  • 1 inch ginger, peeled
  • 1 lime, juiced
  • Salt, oil, and steamed rice

Method

  1. Blend cilantro, mint, chile, garlic, ginger, lime juice, and salt into a paste.
  2. Warm a little oil in a skillet and fry the paste for 1 minute.
  3. Add coconut milk and bring to a gentle simmer.
  4. Nestle fish into the sauce and cook until just opaque.
  5. Serve with rice and extra mint leaves.

Fresh Mint Tip

Do not boil the sauce hard after adding mint paste; gentle heat keeps the color fresh.
