Lamb Meatball Orzo with Mint

Tender lamb meatballs, tomatoey orzo, feta, lemon, and mint in one skillet.

Ingredients

  • 1 pound ground lamb
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 garlic cloves, grated
  • 1 cup orzo
  • 2 cups crushed tomatoes
  • 2 cups stock
  • 1/2 cup crumbled feta
  • 1/2 cup chopped fresh mint
  • Salt, pepper, and olive oil

Method

  1. Mix lamb with breadcrumbs, egg, half the garlic, salt, and pepper; shape into small meatballs.
  2. Brown meatballs in olive oil and set aside.
  3. Cook remaining garlic, then add orzo, tomatoes, and stock.
  4. Nestle meatballs into the skillet and simmer until orzo is tender.
  5. Fold in feta and mint just before serving.

Fresh Mint Tip

Save the mint for the final minute so it smells fresh against the warm tomato sauce.
