Lamb Kofta Bowls with Mint Yogurt

Warm spices, rice, cucumber, tomatoes, and a cool mint sauce in one generous bowl.

Ingredients

  • 1 pound ground lamb
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 cups cooked rice
  • 1 cucumber and 2 tomatoes, chopped
  • 1 cup plain yogurt
  • 1/2 cup chopped mint
  • 1 garlic clove, lemon juice, salt, and pepper

Method

  1. Mix lamb with spices, salt, and pepper; shape into small patties.
  2. Sear kofta until browned and cooked through.
  3. Stir yogurt with mint, garlic, lemon juice, and salt.
  4. Build bowls with rice, cucumber, tomatoes, and kofta.
  5. Spoon mint yogurt over the bowls and garnish with extra leaves.

Fresh Mint Tip

Use spearmint here if you have it; its sweetness is especially good with lamb.
