Ingredients
- 4 salmon fillets
- 1 English cucumber, finely diced
- 3 scallions, thinly sliced
- 1/2 cup fresh mint leaves, chopped
- 1 lemon, zested and juiced
- 1 tablespoon capers, chopped
- 2 tablespoons olive oil
- Salt and black pepper

Dinner
Rich grilled salmon gets a cool, crunchy relish of cucumber, scallion, lemon, and mint.
Add mint to the relish after the lemon and oil are mixed so the leaves stay green.
