Grilled Salmon with Mint Cucumber Relish

Rich grilled salmon gets a cool, crunchy relish of cucumber, scallion, lemon, and mint.

Ingredients

  • 4 salmon fillets
  • 1 English cucumber, finely diced
  • 3 scallions, thinly sliced
  • 1/2 cup fresh mint leaves, chopped
  • 1 lemon, zested and juiced
  • 1 tablespoon capers, chopped
  • 2 tablespoons olive oil
  • Salt and black pepper

Method

  1. Season salmon with olive oil, salt, pepper, and half the lemon zest.
  2. Grill or sear salmon skin-side down until just cooked through.
  3. Stir cucumber, scallions, mint, capers, lemon juice, remaining zest, and olive oil together.
  4. Taste the relish and adjust with salt and pepper.
  5. Spoon the mint cucumber relish over warm salmon and serve immediately.

Fresh Mint Tip

Add mint to the relish after the lemon and oil are mixed so the leaves stay green.
