Green Shakshuka with Mint and Feta

A skillet of spinach, herbs, eggs, feta, and mint that works beautifully for dinner.

Ingredients

  • 8 eggs
  • 1 leek, sliced
  • 2 garlic cloves, minced
  • 8 ounces baby spinach
  • 1/2 cup parsley, chopped
  • 1/2 cup fresh mint leaves
  • 1/2 cup crumbled feta
  • 1 lemon, zested
  • Olive oil, salt, and pepper

Method

  1. Cook leek in olive oil until tender, then add garlic.
  2. Add spinach by handfuls until wilted, then stir in parsley, lemon zest, salt, and pepper.
  3. Make wells in the greens and crack in eggs.
  4. Cover and cook until whites set and yolks are still soft.
  5. Top with feta and mint before serving.

Fresh Mint Tip

Scatter mint after the eggs are cooked so it stays leafy and aromatic.
