Falafel Dinner Plates with Mint Parsley Salad

Crisp falafel, creamy hummus, warm pita, and a leafy mint parsley salad.

Ingredients

  • 16 cooked falafel balls
  • 1 cup hummus
  • 4 pitas
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1 cup parsley leaves
  • 1 cup fresh mint leaves
  • 1 lemon, juiced
  • Olive oil, salt, and pepper

Method

  1. Warm falafel according to your preferred method until crisp.
  2. Warm pitas and spread hummus onto plates.
  3. Toss cucumber, tomatoes, parsley, mint, lemon juice, olive oil, salt, and pepper.
  4. Arrange falafel over hummus with pita on the side.
  5. Pile the mint parsley salad over each plate.
