Duck Breast with Mint Plum Relish

Crisp-skinned duck paired with a juicy plum relish sharpened by ginger and mint.

Ingredients

  • 2 large duck breasts
  • 4 ripe plums, diced
  • 2 scallions, sliced
  • 1 teaspoon grated ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1/2 cup fresh mint leaves, torn
  • Salt and black pepper

Method

  1. Score duck skin and season both sides with salt and pepper.
  2. Start skin-side down in a cold skillet and cook until fat renders and skin crisps.
  3. Flip and cook to medium-rare or preferred doneness, then rest.
  4. Stir plums with scallions, ginger, rice vinegar, honey, salt, and mint.
  5. Slice duck and serve with mint plum relish.
