Cod with Minted Pea Mash

Tender cod, sweet peas, lemon, butter, and fresh mint for a light but satisfying dinner.

Ingredients

  • 4 cod fillets
  • 3 cups peas, thawed if frozen
  • 1/2 cup fresh mint leaves
  • 1 lemon, zested and juiced
  • 2 tablespoons butter
  • 1 small garlic clove
  • Olive oil, salt, and pepper
  • Steamed potatoes or bread for serving

Method

  1. Simmer peas until tender, then drain well.
  2. Mash peas with butter, lemon zest, lemon juice, mint, garlic, salt, and pepper.
  3. Pat cod dry and season with salt and pepper.
  4. Sear cod in olive oil until golden and just opaque.
  5. Spoon minted pea mash onto plates and top with cod.

Fresh Mint Tip

Mash mint into warm peas after draining, not while they boil, to keep the color bright.
