Black Pepper Tofu with Mint Snap Peas

Bold black pepper tofu balanced by crisp snap peas tossed with lime and fresh mint.

Ingredients

  • 14 ounces firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 2 cups snap peas, sliced
  • 3 scallions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon cracked black pepper
  • 1 lime, juiced
  • 3/4 cup fresh mint leaves
  • Oil and salt

Method

  1. Toss tofu with cornstarch and pan-fry until crisp.
  2. Stir soy sauce, brown sugar, black pepper, and a splash of water into a sauce.
  3. Add sauce to tofu and cook until glossy.
  4. Toss snap peas with lime juice, scallions, mint, and salt.
  5. Serve tofu with mint snap peas and rice.

Fresh Mint Tip

Keep the mint out of the hot pepper sauce; it is best as the cool counterpoint.
