Afghan Bolani with Mint Yogurt

Golden stuffed flatbreads with potato, scallion, cilantro, and cool mint yogurt.

Ingredients

  • 1 pound pizza dough or flatbread dough
  • 2 potatoes, boiled and mashed
  • 4 scallions, sliced
  • 1/2 cup cilantro, chopped
  • 1 cup plain yogurt
  • 1/2 cup chopped fresh mint
  • 1 garlic clove, grated
  • Lemon juice, oil, salt, and pepper

Method

  1. Mix mashed potatoes with scallions, cilantro, salt, and pepper.
  2. Divide dough, roll thin, fill with potato mixture, and fold closed.
  3. Pan-fry bolani in a thin layer of oil until crisp and browned.
  4. Stir yogurt with mint, garlic, lemon juice, and salt.
  5. Cut bolani into wedges and serve with mint yogurt.

Let chopped mint sit in yogurt for 5 minutes before serving so the sauce becomes fragrant.
