Strawberry Mint Tres Leches

A chilled milk-soaked cake topped with strawberries macerated in fresh mint and lime.

Ingredients

  • 1 baked 9-by-13-inch sponge cake
  • 1 cup evaporated milk
  • 1 cup sweetened condensed milk
  • 1 cup whole milk
  • 1 1/2 cups heavy cream
  • 2 tablespoons sugar
  • 3 cups sliced strawberries
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/2 cup torn fresh mint

Method

  1. Poke holes all over the cooled sponge cake.
  2. Whisk evaporated milk, condensed milk, and whole milk, then pour slowly over the cake.
  3. Chill until the milk is absorbed, at least 4 hours.
  4. Whip cream with sugar and spread over the cake.
  5. Toss strawberries with lime and mint and spoon over slices.

Fresh Mint Tip

Add mint to the strawberries within 15 minutes of serving so the leaves stay bright on the cold cake.
