Salted Mint Caramel Custards

Silky caramel custards get fresh mint steeped into the dairy and a clean sea-salt finish.

Ingredients

  • 1/2 cup sugar for caramel
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup fresh mint leaves
  • 5 egg yolks
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • Flaky salt

Method

  1. Make a deep amber caramel and divide it among ramekins.
  2. Warm cream, milk, and mint until steaming, cover, and steep 15 minutes.
  3. Strain the dairy and whisk into egg yolks, sugar, vanilla, and salt.
  4. Pour into ramekins and bake in a water bath until just set.
  5. Chill and finish with flaky salt before serving.

Keep the mint steep gentle; boiled mint can make the custard taste muddy.
