Roasted Pears with Mint Blue Cheese Cream

Warm roasted pears meet a lightly savory blue cheese cream, honey, walnuts, and fresh mint.

Ingredients

  • 4 ripe pears, halved
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • Pinch of salt
  • 1/2 cup cream cheese
  • 2 tablespoons blue cheese
  • 2 tablespoons Greek yogurt
  • 1/3 cup fresh mint leaves
  • 1/3 cup toasted walnuts

Method

  1. Heat oven to 400 F.
  2. Place pears cut side up with honey, lemon juice, butter, and salt.
  3. Roast until tender and glossy, 20 to 25 minutes.
  4. Whip cream cheese, blue cheese, and yogurt until smooth.
  5. Serve pears with blue cheese cream, walnuts, and mint.
