Roasted Fig Mint Goat Cheese Tart

Jammy roasted figs sit on a tangy goat cheese cream with honey, lemon, and fresh mint.

Ingredients

  • 1 sheet puff pastry
  • 8 ounces goat cheese
  • 1/3 cup Greek yogurt
  • 2 tablespoons honey, plus more to finish
  • 1 teaspoon lemon zest
  • 12 figs, halved
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1/3 cup fresh mint leaves
  • Toasted walnuts

Method

  1. Heat oven to 400 F and bake puff pastry until golden and crisp.
  2. Whip goat cheese with yogurt, honey, lemon zest, and a pinch of salt.
  3. Roast figs with olive oil and a little honey until softened.
  4. Spread goat cheese cream over the cooled pastry.
  5. Top with figs, walnuts, mint leaves, and another drizzle of honey.

Wait until the figs are warm, not hot, before adding mint so the leaves stay aromatic.
