Rhubarb Mint Fool

Soft pink rhubarb, orange, and a quiet thread of fresh mint folded through pillowy cream.

Ingredients

  • 1 pound rhubarb, sliced
  • 1/2 cup sugar
  • Zest and juice of 1 orange
  • 1/2 cup fresh mint leaves
  • 1 cup heavy cream
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla
  • Pinch of salt
  • Shortbread crumbs, for serving

Method

  1. Cook rhubarb, sugar, orange zest, orange juice, and salt until the rhubarb collapses.
  2. Remove from heat, stir in mint leaves, cover, and steep 10 minutes.
  3. Lift out the mint and chill the compote completely.
  4. Whip cream with vanilla, then fold in yogurt.
  5. Layer or swirl cream with rhubarb compote and finish with shortbread crumbs.

Steep whole mint leaves, then remove them, for a clean herbal note without dark flecks.
