- 1/2 cup sugar, divided
- 1 tablespoon lemon juice
- 1/3 cup finely chopped fresh mint
- 4 egg yolks
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla
- Pinch of salt

Creamy frozen mousse rippled with tart raspberries and finely chopped fresh mint.
Chop mint very finely so frozen slices cut cleanly and the herb spreads through the raspberry ripple.
