Raspberry Mint Semifreddo

Creamy frozen mousse rippled with tart raspberries and finely chopped fresh mint.

Ingredients

  • 3 cups raspberries
  • 1/2 cup sugar, divided
  • 1 tablespoon lemon juice
  • 1/3 cup finely chopped fresh mint
  • 4 egg yolks
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla
  • Pinch of salt

Method

  1. Mash raspberries with 2 tablespoons sugar and lemon juice, then fold in chopped mint.
  2. Whisk yolks, remaining sugar, and salt over simmering water until thick and warm.
  3. Beat the yolk mixture until cool and pale.
  4. Whip cream with vanilla, then fold into the yolk mixture.
  5. Layer with raspberry mint swirl in a loaf pan and freeze until sliceable.

Fresh Mint Tip

Chop mint very finely so frozen slices cut cleanly and the herb spreads through the raspberry ripple.
