Plum Mint Rosemary Crumble

Tart plums, a small amount of rosemary, and fresh mint sit under a buttery oat crumble.

Ingredients

  • 6 cups sliced plums
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon minced rosemary
  • 1 cup rolled oats
  • 1/2 cup flour
  • 6 tablespoons butter
  • 1/3 cup chopped fresh mint
  • Vanilla yogurt, for serving

Method

  1. Heat oven to 375 F.
  2. Toss plums with brown sugar, lemon juice, cornstarch, and rosemary.
  3. Rub butter into oats and flour to make a crumble topping.
  4. Bake until bubbling and browned, 35 to 40 minutes.
  5. Rest briefly, then fold mint into the plum juices and serve with yogurt.

Fresh Mint Tip

Use rosemary lightly; too much can crowd out the mint.
