Pineapple Mint Chile Lime Sorbet

Sweet pineapple, lime, fresh mint, and a tiny chile warmth churn into a clean sorbet.

Ingredients

  • 4 cups ripe pineapple chunks
  • 2/3 cup sugar
  • 1/2 cup water
  • 1 cup fresh mint leaves
  • 1/3 cup lime juice
  • 1 teaspoon lime zest
  • Pinch of salt
  • Pinch of cayenne or Aleppo pepper

Method

  1. Simmer sugar and water until dissolved, then cool.
  2. Blend pineapple, syrup, mint, lime juice, lime zest, salt, and chile.
  3. Strain for a smoother texture if desired.
  4. Chill until very cold.
  5. Churn in an ice cream maker and freeze until scoopable.
