Pear Mint Gingerbread Trifle

Spiced gingerbread, soft pears, fresh mint, and cream layer into a cozy but bright trifle.

Ingredients

  • 4 cups cubed gingerbread cake
  • 4 ripe pears, diced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1/3 cup chopped fresh mint
  • 2 cups whipped cream
  • 1/2 cup caramel sauce
  • Pinch of salt
  • Toasted pecans

Method

  1. Cook pears with butter, brown sugar, lemon juice, and salt until just tender.
  2. Cool the pears until barely warm, then fold in chopped mint.
  3. Layer gingerbread cubes, pears, whipped cream, and caramel in a large bowl or glasses.
  4. Chill at least 1 hour so the cake softens slightly.
  5. Finish with pecans and a few small mint leaves.
