Peach Mint Sorbet

Ripe peaches, lemon, and a mint-steeped syrup churn into a clean, sunny sorbet.

Ingredients

  • 2 pounds ripe peaches, peeled and sliced
  • 2/3 cup sugar
  • 2/3 cup water
  • 1 cup fresh mint leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Pinch of salt

Method

  1. Simmer sugar and water until clear, remove from heat, and steep mint for 15 minutes.
  2. Strain the syrup and cool.
  3. Blend peaches with mint syrup, lemon juice, lemon zest, and salt.
  4. Chill until very cold.
  5. Churn in an ice cream maker and freeze until scoopable.

Fresh Mint Tip

Taste the peach puree before churning; add lemon if the mint makes it seem too sweet.
