Ingredients
- 1 cup fine cornmeal
- 1 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 eggs
- 3/4 cup sugar
- 1/2 cup olive oil
- Zest and juice of 2 oranges
- 2 oranges, segmented
- 1/3 cup torn fresh mint
- 2 tablespoons honey

Dessert
A sunny cornmeal cake with olive oil, orange, and a fresh mint citrus salad spooned over each slice.
Tear mint into the citrus salad right before serving so it perfumes the orange juices.
