Orange Mint Olive Oil Granita

Fresh orange juice freezes into flaky crystals with mint, olive oil, and a tiny pinch of salt.

Ingredients

  • 3 cups fresh orange juice
  • 1/2 cup water
  • 1/3 cup sugar
  • 3/4 cup fresh mint leaves
  • 1 tablespoon lemon juice
  • 1 teaspoon orange zest
  • 1 tablespoon olive oil
  • Pinch of flaky salt

Method

  1. Simmer water and sugar until dissolved, then steep mint for 12 minutes.
  2. Strain syrup and stir in orange juice, lemon juice, orange zest, olive oil, and salt.
  3. Pour into a shallow pan and freeze 45 minutes.
  4. Scrape with a fork, then freeze and scrape until fluffy.
  5. Serve in chilled glasses.

Fresh Mint Tip

Whisk the olive oil in well before freezing so it perfumes the granita evenly.
