Minted Hazelnut Chocolate Pudding

A silky chocolate pudding steeped with fresh mint and finished with toasted hazelnuts and salt.

Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup fresh mint leaves
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 3 tablespoons cornstarch
  • 4 ounces dark chocolate, chopped
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup toasted hazelnuts

Method

  1. Warm milk, cream, and mint until steaming, then cover and steep 15 minutes.
  2. Strain the dairy into a saucepan.
  3. Whisk sugar, cocoa, cornstarch, and salt into the mint dairy until smooth.
  4. Cook, stirring constantly, until thick and glossy, then whisk in chocolate and vanilla.
  5. Chill in cups and serve with chopped hazelnuts.
