Minted Cucumber Honey Panna Cotta

Cool cucumber and fresh mint lighten a honey panna cotta for a refreshing dessert.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/3 cup honey
  • 1 cup fresh mint leaves
  • 2 teaspoons gelatin
  • 3 tablespoons cold water
  • 1/2 English cucumber, grated and squeezed dry
  • 1 teaspoon lime zest
  • Pinch of salt

Method

  1. Bloom gelatin in cold water.
  2. Warm cream, milk, honey, salt, and mint until steaming; cover and steep 15 minutes.
  3. Strain, whisk in gelatin, cucumber, and lime zest.
  4. Pour into cups and chill until set.
  5. Serve with a few tiny mint leaves.

Fresh Mint Tip

Squeeze the cucumber very dry so the panna cotta sets cleanly.
