Minted Cherry Clafoutis

Juicy cherries bake into a tender custard, then mint and lemon sugar brighten the warm top.

Ingredients

  • 2 cups pitted cherries
  • 3 eggs
  • 1/2 cup sugar
  • 3/4 cup whole milk
  • 1/4 cup cream
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1/4 cup fresh mint
  • 1 teaspoon lemon zest

Method

  1. Heat oven to 350 F and butter a shallow baking dish.
  2. Scatter cherries in the dish.
  3. Blend eggs, sugar, milk, cream, vanilla, flour, and salt until smooth.
  4. Pour batter over cherries and bake until puffed and set, 35 to 40 minutes.
  5. Mince mint with lemon zest and a spoonful of sugar, then sprinkle over the warm clafoutis.

Fresh Mint Tip

Mince mint with sugar just before serving so the sugar catches the mint oils.
