Minted Berry Pavlova

Crackly meringue, whipped cream, berries, and finely torn mint leaves.

Ingredients

  • 1 baked pavlova shell
  • 1 1/2 cups whipped cream
  • 2 cups mixed berries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1/4 cup torn mint leaves

Method

  1. Toss berries with sugar and lemon juice.
  2. Let stand for 10 minutes, then fold in torn mint.
  3. Spoon whipped cream into the pavlova shell.
  4. Top with minted berries and serve immediately.

Add mint after the berries rest so it keeps its color and fragrance.
