Mint Tahini Chocolate Tartlets

Dark chocolate tahini ganache gets fresh mint cream, sesame crunch, and a pinch of salt.

Ingredients

  • 8 mini tart shells
  • 1 cup heavy cream
  • 3/4 cup fresh mint leaves
  • 8 ounces dark chocolate, chopped
  • 1/4 cup tahini
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • Pinch of salt
  • Toasted sesame seeds
  • Small mint leaves

Method

  1. Warm cream with mint until steaming, cover, and steep 15 minutes.
  2. Strain and rewarm the cream.
  3. Pour over chocolate, tahini, honey, vanilla, and salt.
  4. Whisk smooth and spoon into tart shells.
  5. Chill until set, then finish with sesame seeds and mint leaves.

Whisk tahini fully into the ganache before chilling so the texture stays glossy.
