Ingredients
- 1 baked olive oil tart shell
- 1 1/2 cups lemon curd
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 1/3 cup finely chopped fresh mint
- 1 teaspoon lemon zest
- Pinch of salt
- Small mint leaves, for serving

Dessert
Sharp lemon curd in an olive oil crust gets a soft cap of fresh mint cream.
Chop mint very finely for the cream so each slice cuts neatly.
