Mint Lemon Curd Olive Oil Tart

Sharp lemon curd in an olive oil crust gets a soft cap of fresh mint cream.

Ingredients

  • 1 baked olive oil tart shell
  • 1 1/2 cups lemon curd
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1/3 cup finely chopped fresh mint
  • 1 teaspoon lemon zest
  • Pinch of salt
  • Small mint leaves, for serving

Method

  1. Spoon lemon curd into the cooled tart shell and chill until firm.
  2. Whip cream with powdered sugar, lemon zest, and salt to soft peaks.
  3. Fold in finely chopped mint.
  4. Spread or dollop mint cream over the lemon curd.
  5. Finish with small mint leaves and serve cold.

Fresh Mint Tip

Chop mint very finely for the cream so each slice cuts neatly.
