Mint Cacao Nib Brownies

Fresh mint rubbed into sugar gives fudgy brownies an herbal lift, while cacao nibs add bitter crunch.

Ingredients

  • 1/2 cup fresh mint leaves
  • 1 cup sugar
  • 10 tablespoons butter
  • 6 ounces dark chocolate
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/3 cup cacao nibs

Method

  1. Heat oven to 350 F and line an 8-inch pan with parchment.
  2. Rub mint leaves into sugar until fragrant, then lift out any large leaf pieces.
  3. Melt butter and chocolate together and cool slightly.
  4. Whisk mint sugar, eggs, and vanilla into the chocolate mixture.
  5. Fold in flour, cocoa, salt, and cacao nibs, then bake until just set, 24 to 28 minutes.

Fresh Mint Tip

Remove large mint pieces before baking; the infused sugar gives better flavor than cooked leaves.
